Great Chicken Barbeque
Have you ever noticed how all great barbeque recipes are for beef or pork. What about Chicken? Chicken is wonderful on the grill, once you try it, you won’t be disappointed. With the many choices of sauces and rubs available today, every meal can be exciting and different.
If you are more adventurous, you can make your chicken barbeque recipe. You can also marinate your chicken for a different flavor. Just remember, chicken does not need to stay in marinate as long, it is tenderer than beef or pork. Chicken also MUST be cooked thoroughly. Always check for doneness by cutting into the thickest part, juices should run clear.
One thing to remember is that chicken needs to cook slowly, so it will be juicy. Limiting the sugar in the sauce, and waiting until the last five minutes to apply it, will also limit the chance of burning.
A good chicken barbeque recipe is one that is easy to make, and gets raves from those who taste it. You can make your own sauce in minutes with a few common ingredients.
4 chicken leg quarters
oil
pepper
salt
2 c ketchup
1/4 c vinegar
1 tsp garlic powder
1 c chopped onion
1 1/2 tsp seasoned salt
Saute onion in 1 tbs of oil, add remaining ingredients, simmer on low heat until desired thickness.
Rinse chicken, trim any fat, remove skin if desired. Sprinkle with salt and pepper, grill on a medium grill until juices run clear, baste with barbeque sauce during the last 5 minutes, Enjoy.
